Mediterranean Recipe: Corn Salad
Makes 4 Servings
Ingredients
1 can of cooked corn, drained
4 chicories, chopped
2 tomatoes, dicedI small onion, finely chopped 1 garlic clove 2 tablespoons of extra virgin olive oil juice of a lemon
Preparation
Place corn, chicories, tomatoes and onion in a bowl. Toss it.In a mortar, crush the garlic. Add the oil and lemon juice slowly to the garlic. Add the mixture to the salad and toss it.
