Mediterranean Recipe: Fresh Tuna with Ratatouille
Makes 4 Servings
Ingredients
1 ½ lb fresh tuna cut in slices
1 green pepper
2, 16-oz cans chopped tomatoes 1 large bay leafextra virgin olive oil salt and sugar
Preparation
Cut the onion and the green pepper in cubes. Heat 6 spoons of olive oil in a skillet over medium-high heat.
Sauté the onion and the pepper. Before they get too brown add fresh tuna.
Pour tomatoes over tuna. Add a pinch of sugar, salt to taste and bay leaf. Cover the skillet, reduce the heat to low, and let cook for 10 minutes. Serve hot.
